Built in 1832, The Royal is the Island’s premier four-star hotel and shares the rare privilege of being one of only 30 establishments to be listed in every Michelin Guide since it was first published in 1911. The Royal was also the first hotel on the Island to achieve Four Stars, AA rating and has held 2 AA Rosettes for excellent food for over 20 consecutive years.

Senior Sous Chef

Head Chef Jon-Paul Charlo is looking to recruit an outstanding Senior Sous Chef to join his talented team of chefs.

These exciting opportunities are open to experienced and talented Chefs who can lead and inspire others with their exceptional culinary skills and knowledge. We require that you:

  • have at least 4-5 years experience working in a kitchen with 2 rosettes/Michelin star or above in a senior position
  • are capable of working on all sections including sauce and possibly pastry
  • have good time-keeping, positive attitude and enthusiasm
  • are passionate about food and your profession
  • have experience of managing a team of 12 or more chefs
  • have strong leadership and development skills to train and inspire others
  • have excellent knowledge and passion for local fresh food with creative ideas for new dishes
  • have proven ability to run a kitchen and maintain consistency on the Head Chef's days off
  • have knowledge and experience of a Food Safety Management System based on HACCP
  • are Level 3 Food Hygiene qualified (if not, full training will be given for the right candidate)
  • have a strong desire to succeed, influence and learn

You will be part of the senior managment team, reporting to the Head Chef. In return, we will develop you and increase your food knowledge, and teach you a wide range of skills.

We are looking for an experienced Hotel Receptionist with a passion for delivering exceptional customer service. Providing a warm welcome to our guests, you must be able to anticipate their needs and exceed their expectations.

Working in a high pressured environment, you will be responsible for taking room, restaurant and event reservations and should be able to work in a calm, organised and professional manner. You must be a confident communicator and strong administration and computer skills are essential.
