The Geranium Restaurant

Our award-winning Geranium Restaurant is the heart of the hotel’s dining experience and has held 2 AA Rosettes for excellent food for 30 consecutive years. Celebrated for its refined seasonal menus, elegant ambiance, and 5-star hospitality.

What are we looking for?

We are seeking a passionate and experienced Food & Beverage Manager to lead our front-of-house team with energy, professionalism, and an eye for detail.

This is a hands-on leadership role, ideal for someone who thrives in a fast-paced environment, has a flair for customer service, and inspires their team to consistently deliver exceptional hospitality.

Key Responsibilities:

  • Oversee the smooth running of the Geranium restaurant during breakfast, lunch, and dinner services, as well as the daily operations in the hotel’s bar and lounges.
  • Lead by example, maintaining the highest standards of service and guest care, handling guest feedback professionally and promptly.
  • Schedule staff rotas for the bar/restaurant and ensure optimal staffing levels across both departments at all times.
  • Liaise with the Head Chef and senior kitchen team on menu’s, customer feedback and food service operations.
  • Curate and evolve the wine, cocktail and drinks lists regularly.
  • Managing all front of house ordering and stock levels, including overseeing regular stock takes.
  • Train, mentor and develop team members in all front of house areas to achieve their full potential.
  • Ensure compliance with all relevant health and safety regulations.
  • Maintain strong communication with all departments to ensure seamless operations throughout.
  • Work closely with the senior management team, covering duty management shifts and dealing with any relevant issues when required

Key Attributes:

· Proven experience in a similar senior front of house or restaurant management role

· A hands-on approach with a strong presence on the floor

· Excellent communication and leadership skills

· A passion for hospitality and creating memorable guest experiences

· Strong knowledge of wines, cocktails and beverages is preferable

What are we looking for?
We’re looking for an enthusiastic and motivated Bar Person to join our front-of-house team. The ideal candidate will have strong communication skills, a positive attitude, and the ability to thrive in a fast-paced environment. You should be comfortable working both as part of a team and independently.

While previous experience is beneficial, particularly in cocktail making or coffee preparation, it’s not essential. Full training will be provided for the right candidate.

Key Responsibilities:

  • Oversee the day-to-day operations of the hotel, ensuring smooth coordination between departments, maintaining exceptional service standards, and driving overall operational efficiency.
  • Report to the directors on operational, business, staffing and development matters.
  • Ensure compliance with all relevant health and safety regulations.
  • Ensure each department consistently delivers high levels of guest service and achieves business objectives, maximising profitability across all areas.
  • Promote a culture of excellence in guest care, focusing on a warm welcome and exceeding expectations in all respects.
  • Develop the team of managers and Heads of Department to ensure seamless day-to-day operations.
  • Conduct regular operations meetings with management and HODs to discuss performance targets, guest feedback, and operational matters.
  • Resolve guest queries, grievances, and any arising issues promptly, ensuring the highest standard of service.
  • Review development opportunities across the business to attract a wider demographic as guests and non-resident customers.
  • Maximise financial opportunities, cultivating a proactive up-selling approach across the hotel whilst ensuring cost savings where possible.
  • Regularly inspect all departments, ensuring standards are met in service delivery, cleanliness, presentation, and overall guest experience.
  • Ensure consistent implementation and periodic review of Standard Operating Procedures across all departments.
